Truly Low Carb Creamy Seafood Bake

 

 

  • 1-2 lbs. cod, orange roughy, haddock or other mild white fish

  • 12 scallops

  • 5 Tb. olive oil

  • 1 cup sour cream

  • 2 Tb. garlic powder

  • 2 Tb. chopped fresh herbs (I use garlic chives but dill weed, thyme, or rosemary would be lovely too)

  • 2 tsp. salt

  • 2 tsp. fresh ground black pepper

  • Preheat oven to 425 degrees F (220 C). Rinse fish and scallops and pat dry. Pour olive oil on a plate. Roll fish fillets and scallops in the oil and then salt and pepper both sides of each one. Arrange oiled portions in one layer in a baking pan. Sprinkle tops with garlic powder and then cover with sour cream and chopped herbs.  Bake approximately 10-12 minutes, until fish flakes easily with fork and scallops are tender.

    Even the kid who “hates fish” ate this meal….
