MY CURRENT NUTRITIONAL GOALS:

FAT GOAL: = At least 65% of total calories, but more works better for me!

CARB GOAL: NET = < 30gm but I don't worry if I go up to 40 net occasionally.

PROTEIN GOAL: 120 gm (this is based on my LBM of 142 lbs as well as my activity level)

CALORIES: I keep track but I do not actively restrict them.

November 1, 2000 Wednesday
BREAKFAST 7am Coffee with half and half cream, 2 egg omelette with sharp cheddar and ham and turkey, 1 slice toasted Oroweat with 2 tsp. butter
LUNCH: in the car 1:45, 1 Atkins bar
SNACK: 5p 1 oz mixed nuts
DINNER: 6p Mountain oat bread wrap with 1cup chicken salad. 2 oz. sharp cheddar

Morning after notes: I was positive I would be down, but so much for what I know  up half a pound L Could be because I only spent 5 hours in bed and didn't drink squat for water. In fact, I know that's it. Without proper sleep and enough water, nothing else matters.
There is SNOW on the ground, yippee! I don't mind driving in it if I can ski in it, and I can't wait to ski this year with my new muscles! 16 days till Vail opensopenopenOPEN already.

Morning after notes: Down a whole pound! Yippee. Saw the doctor, who scheduled me for a Doppler scan of my leg in a couple weeks with a vein specialist. Since it finally started to heal but only with the use of a support stocking, it seems clear that there is venous involvement. That part is not good, but it is better to know something like that than to not know, and it sure isn't a visible problem, if not for this infection in that area we might not have found out for a long time that I even had a problem.


November 4, 2000 Saturday
BREAKFAST 7am Coffee with half and half cream, 6 slices bacon
LUNCH: Fried egg sandwich! Sliced 1 piece of Alvarado St sprouted multi grain bread into 2 very thin pieces then toasted them, with 2 fried eggs and 1.5 oz cheddar cheese and 2 Tb mayo in between.
SNACK: Lean protein chips and pork rinds dipped in fresh picante (salsa)
DINNER: 2.5 Mexican wraps: Ground beef and black soy beans seasoned with Ancho Chili paste, and shredded cheddar, wrapped up in mountain bread and baked till crispy, then topped with sour cream and loads of fresh salsa. Followed by 2 TLC Almond Nirvana bars - OMG was THAT good!

Morning after notes: More snow out there, YAHOO. Up a pound and a half! Yikes. But worth itI overdid the salsa and the wraps, it had been so long since I ate anything so resembling real Mexican food. I may have to think twice about the guacamole and salsa and SF margaritas I had planned for gametime today, however. Although I already bought all the limes and avocadoes, and it would be a real shame to let them go bad perhaps I could say this whole weekend was a mini-vacation, in celebration of the book? We shall see how I feel this afternoon, but I just may GO FOR IT. I feel worthy.


November 5, 2000 Sunday
BREAKFAST 830am Coffee with half and half cream, 1 srv. leftover Keto Pasta Parmesan
LUNCH: 1pm Nachos!! TLC Guacamole, lean protein chips, cheddar, picante sauce And 2 PERFECT MARGARITAS: Over ice, in a cocktail shaker: 4 parts Baja Bob's SF sweet and sour mix, 2 parts Cuervo 1800 Anejo tequila, 1 part Grand Marnier, 1 part Triple Sec, 1 part fresh lime juice. Strain out into salted glasses.
SNACK: 3 almond nirvana bars
DINNER: Thought I'd better skip it after yesterday's gain and today's indulgence.

BREAKFAST 8am Coffee with heavy cream, and 10am: a peanut butter and bacon sandwich!! on 2 thin slices of toasted LC bread. Yum.
LUNCH: 1p Salad with 4 oz. chicken, 1 cup Romaine, 1 oz. shredded cheddar, and 2 Tb. TLC ranch
SNACK: Pure Delight SF chocolate bar with almonds, half serving of Just the Cheese jalapeno flavor (the UPS man came today with my netrition order!!)
DINNER: Here's where I really screw up. I started off with 2 Perfect Margaritas, followed by (this is all a guess from here!) 1 oz of Maui onion macs, 3 oz of mixed nuts, 3 oz summer sausage and 2 oz sharp cheddar on 1.5 wasa crackers with jalapeno mustard. Then later because I still had the munchies (from the alcohol! Beware) I went and made a bowl of OIAB with 4 oz cream cheese, a little bit of whipped cream, peanut butter and cocoa, and chocolate Davinci syrup, and ate the whole thing.
WATER: 3 liters

Morning after notes: Up two more pounds!! OMG. Consider me "on the wagon" for a while, I don't care how many fresh limes I have in the house  no more Margaritas!! My fingers look like little sausages and my rings are so tight (I moved them all up a finger and they fit just right- usually!) that they hurt. I woke up at 5:55am too, and it's Saturday  sheesh! The one bright note is that it is STILL SNOWING, we have oh, maybe six inches on the ground right here, Vail mountain was due to get at least 18 from this storm, and they had already moved opening day up to next Wednesday, before this storm even started. Ya-hooooooo, I can't wait to *ski* these extra pounds off. Beats walking them off, any day.


November 11, 2000 Saturday

LUNCH: 2p  went out with my girlfriend! Salad with ranch, the guts from a Philly cheese steak sandwich, and 2 chicken wing pieces. 1 Miller Lite

DINNER: 1 burger made from ground moose and bacon topped with 1 thin slice cheddar

10am  half an Aspen Ice Cream LC bagel  I THINK!! It was so darn good and the texture so chewy I wonder if if was actually a "normal" one. The plain ones are better than the onion ones, texture wise!
LUNCH: 12p  pepperoni, a cheese crisp, 2 Diet Rites, and some Maui onion macs
DINNER: None - I went to sleep at 3:30 and stayed that way. Guess I am caught up now.

Morning after notes: Went up ANOTHER &^$%^* pound. That's 3 days in a row with calories between 1500 and 1900 and I still can't seem to get my losin' groove back. Grrrrrrrrr! I am now 2 lbs. over my all time low. But it could be worse, I guess.


November 14, 2000 Tuesday
BREAKFAST 8am Coffee with heavy cream, 2 TLC Vanilla Nut muffins
LUNCH: 12p 1 small can tuna mixed with 1.5 Tb mayo, on a Mtn. bread wrap
SNACK: 1 oz Maui onion macs
DINNER: Cooked a huge box of jumbo butterflied shrimp from Sam's Club. 10 minutes in the oven, what could be easier?! It was fat free till I started dipping them into real melted garlic butter  YUMMMM. No sides needed. Did eat 2 Nirvana bars afterward from the fresh batch I made.
WATER: 2 liters  I am really down on my consumption lately! Gotta work on that.

LUNCH: Chicken fajita salad with salsa and sour cream as dressings, in a restaurant  ate around the stuff I was wary of, sent back the shell, and requested sour cream and salsa to dress it with.
SNACK: Carb Solutions bar
DINNER: Braised pork loin, about 6 oz, and 1 cup sauerkraut. Not one potato dumpling that I made for the kids, though it about killed me. Haven't been tempted in a long time, not like that. I wasted a bunch of LC ingredients with my 2nd failed attempt at a LC version of these. Think I should give up, some things just require white flour to work Also ate 1 Peanut Nirvana after dinner.
WATER: 3 liters  slightly better
SUPPLEMENTS: I think I forgot.

Morning after notes: In spite of the fact that TOM showed up at 11 am, 3 days early, I am down half a pound today. This is a first! I always GAIN at TOM time. Guess it is just as well that I was not skiing at the time, like I was supposed to be! At this rate, I may be ready to ski with the kids on Saturday instead.


November 16, 2000 Thursday
BREAKFAST 8am Coffee with heavy cream, 6 slices bacon, 2 fried eggs, 1 toasted Oroweat Lite with butter
LUNCH: LC tuna melt (I latortilla topped with 4 oz tuna, 1 Tb mayo, and ¼ c. shredded cheddar, then broiled)
SNACK: 2 pain pills! Actually took 4 during the course of the day
DINNER: well I wouldn't call it DINNER, really, and I can blame TOM  a Carbolite dark and 1 oz maui onion macs, then 2 nirvana during the evening hours

November 17, 2000 Friday
BREAKFAST 8am Coffee with heavy cream, 1 Designer Protein bar (not terrible but I will never buy them again)
LUNCH: Tyson pre-grilled chicken strips, about 5 oz covered with sour cream and green Tabasco, also 1 cup Romaine with ranch
SNACK: 5pm 1 oz maui onion macs
DINNER: went out! Had a salad with ranch and a 10 oz sirloin steak and one bite of green beans that was DRENCHED with honey. OMG> What won't people sweeten these days? For the cost of our meal I could have bought a week's worth of steak at Sam's Club, too. But we were celebrating  Mitch passed his Master Electrician's License exam the night before and Roxanne made the JV basketball team, as a freshman, not an easy thing to do and something she worked very hard at. And Matthew came home from school with a certificate of accelerated reading. And I got my FEIN (whoopie). So, out we went, and cured we are. And after we got home I made a big bowl of instant OIAB. (I have one of these whip cream machines that use co2 so I can make individual servings easily. One tip  don't ever put davinci syrup or vanilla extract into the machine, the cream then "burns" your tongue and tastes awful! But the machines are WAY cool, like Redi-whip but you can make it with Splenda and real cream.)

LUNCH: Took a protein shake with me but I added too much Davinci, or the wrong flavor  it was awful and I couldn't drink it. At 3:30 I ate 1laTortilla filled with 4 oz grilled Tyson chicken strips, 2 Tb. shredded cheddar, and green Tabasco  after shopping, by that time I was ravenous, just ask my kids what kind of mood Mommy was in

November 21, 2000 Tuesday
Got really busy preparing for Thanksgiving and stopped recording everything in Lifeform.
I went to the vein doctor this day for a Doppler Scan. He found no indication that I will suffer from varicose veins like my mother but he did find a "perforator" vein under the scar. Said he can't tell if it is "leaking" but since I am healing, to proceed on the assumption that all is well, and if the area breaks down again, then it must be leaking and he will do surgery to "tie it off". For now I must keep wearing the support stocking :( especially when exercising, standing for long periods, etc. Prepared smothered mexican wraps for dinner, and fresh salsa, ate too much and gained a pound.


Wed. the 22nd  skiied all day and skiied my totally thin friend, who has been going to the gym three times a week regularly, since last spring, into the ****ing GROUND. As usual, I could do that even when I was fat fat fat, but this time she didn't expect it since she is in better shape then she has ever been. I KNEW it would be that way, since I have been exercising all along, myself, as well, and could always do it  hehehehe. I am happy to report that once again I can ski from the tippy top of Vail Mtn down to the very bottom without ever stopping even ONCE. Whooo Hoooo. Been 15 years since I could say that. Karen, the virtual blur on skis, is back. Watch out. (I even caught some air about 5 times!! And have no broken bones.)


Thursday the 23rd, Thanksgiving Day  I was good, but not good enough For breakfast I ate 3 fried eggs and some bacon. Never had lunch, just sort of grazed on the LC appetizers  which included Spicy Nut Mix and Sweet Nut Crunch, shrimp with cocktail sauce, fresh salsa and pork rinds (tortilla chips for them), fresh veggies with TLC ranch and bleu cheese dips, beef summer sausage, pepper jack and sharp cheddar cheeses with jalapeno mustard, and crackers. Dinner included turkey, LC stuffing prepared with my own dried LC bread and a loaf of Oroweat lite too, "regular stuffing" for them, gravy made with ThickenThin and Keto-milk for all (no one could tell the difference!) mashed potatoes for "them", LC cranberry sauce (served "regular" as well) green bean casserole with a minimal amount of Durkee onions in it and none on the top, a big smoked ham, and SF orange jello with real orange pieces in it. Although I ate more than I usually would other years, I did NOT feel stuffed and lethargic afterwards, in fact I jumped up to clear and do the dishes pretty quickly. Dessert included one bite of my daughter's very first homemade pie (apple) one piece of my own LC lemon meringue pie, and coffee with DaVinci syrup  macadamia nut, my new favorite flavor. This morning, I am up FIVE pounds. Can you imagine what would happen if I ever ate a CAD "reward meal"????!!!! I probably had 8- carbs over the course of the day  at the absolute max. *sigh* Won't do this again anytime soon, and hope it goes away quickly. Will be very good the rest of the weekend and as soon as the pass restrictions are lifted I will ski again, and that will help for sure. There will never be a more fun way to exercise than skiing hard, of that I am convinced. And re: this holiday - I have no regrets, as I did nothing "bad", it is just that I am so sensitive to carbs compared to some people So I am up 6 pounds, altogether. SO WHAT. I lost them once and I will lose them again. Starting right now! :)


FRIDAY THE 24th  I was very good and kept my carbs very low and dumped 3 pounds. But I didn't enter anything in Lifeform and I have no intention of going back to try to recreate it I sort of enjoyed the break!~

Had I stayed away from the baked goods, and **actually** eaten low carbs, in combination with this kind of fat, I feel sure I would have lost. Now I am up almost 5 pounds, total, and I am far from pleased. I vow to run to the computer and input every single thing I even THINK about eating, BEFORE I do it, for the rest of the week, and I am sure that will get me back on track! Something has to! I got the surprise of my life this morning.

Each morning I log in to the internet early in the AM and check my email first, hoping to see lots of Paypal book payments. Yesterday was the first weekday since I started taking orders that I did not get even one, neither in my mailbox or via Paypal. Bummer!!! I sighed, switched identities, and checked my personal email address next. Surprise, surprise...
I had been wanting to find a way to make money from my cooking and writing abilities for a long time now. Last year at this same time, I thought I figured it out! I started writing a free-lance column (gratis) for the local Women's Newspaper that I was helping out with. I thought, hey! there are SO MANY people out there that do not know how to make cakes and cookies come out well at high altitudes, that they would surely like to have someone give them the recipe already converted for our altitude. So I came up with the name "Mountain Fare" and I did a bunch of columns and sent them to newspaper editors all over the Rocky Mountain region, from here to Tahoe to Utah...
The response was disappointing: We love your writing style, and the recipes look wonderful, but we do not have any money in our budget for "things like this". (Apparently "housewives/cooks" do not merit a lot of attention ($) in journalistic enterprises!)

Well, in late January I started LC and I stopped trying to promote the high altitude baking column. That's when I started formulating LC recipes and sharing them on the internet. People started telling me right and left that I should write my own LC cookbook, and after thinking about it, I went ahead and did so... the rest, as they say, is history....

Well, this morning, I found this message in my inbox:

Are you still doing a high country cooking column? If so, what would you charge for a 10,000 circ daily? We have food pages every Wednesday.

So I wrote back to say, hey, make me an offer, and he is now offering me $20 a column?! That is practically slave wages, since I pour my heart and soul into everything I do, and I bet I have 5 hours into each column for just the writing, not to mention the research - but the exposure would be wonderful. So I told him $25 each and I want to list my website URL in the bio-blurb about me, next to my picture. I have 6 columns already done, after all, might as well make some money from them, even if it is a pittance - the free publicity for TLC could be worth much more than that...

Sure, I can do $25. One thing you have to realize when you get into this
is that even well-known syndicated columnists run only $5-$10 or so per
week for a paper our size, so when you go out to sell a column, that's
what you're up against! On the other hand, I've never seen a high-altitude
cooking column anywhere, thus my interest. You're correct in that you'll
have a lot more luck selling your column once you can show it's being run
in a reputable paper. We might be able to help within our group, since we
also own papers in Vail, Aspen, Glenwood Springs, Eagle and the Lake Tahoe
area. If you can get a dozen or so papers going, it works out to pretty
decent change on a monthly basis.

Here's the deal:
-We'll start Dec. 6, running the column in our weekly (every Wednesday)
Food For Thought section.
-You will need to have the column to us by 5 p.m. Monday each week. E-mail
is the preferred method of delivery, and you should send it to **
-Your column should be no more than 500 words. The samples you gave me
appear to be a good deal above that, so you'll have to learn to be more
economical with your writing. This count includes your bio/blurb at the
end. If you have something that warrants more room (like for holiday
season or something), contact ** or **and get it cleared first.
-We'll need a mugshot of you. If you have one, you can drop it in the mail
or e-mail it. If not, perhaps you could stop by the Vail Daily and I can have one of their photogs take a picture.

Can you even believe it? I am on top of the WORLD. He is paying me 2.5 to 5 times as much as he pays nationally syndicated columnists, and I think that says a LOT!!! Added to fact that he contacted ME after a whole year  it WAS a good idea! I KNEW IT!!
And since I obviously have some discretion as to what I write, I can at least make all my published recipes low-carb friendly, with LC conversions included, to start with. A little at a time, I am going to try to convert EVERYONE to LC, hehehehehe. But as I formulate new high-carb recipes, I may have to taste them. One bite a week won't de-rail my LC diet TOO bad, I hope and my kids are gonna be REALLY happy to see me baking for THEM again! ;^)
NEVER GIVE UP ON YOUR DREAMS. When you least expect it, they can all some true. I have wanted to be a "free-lance journalist" since I was 8 years old and now I am one!!! LUNCH: Took it with: Ate a can of drained tuna with 2 Tb. mayo, on 2 LaTortillas with Romaine lettuce, 2 cheddar string cheeses, 1 oz. peanuts, and 1 Atkins mocha crunch bar (the bar was unplanned - I was still starving for some reason and I always carry one with me, just in case.)
SNACK: when I got home, I grabbed 1 piece Mac Nirvana and ¼ cup almonds
DINNER: Went to a steak house and enjoyed a salad with mystery Ranch dressing (I always wonder what they are serving me, when I am out, and much prefer to cook for myself these days!) and a 10 oz. Ribeye with 6 grilled shrimp. Asked for steam,ed veggies instead of the starch, but only picked at them, as they were cold and unseasoned. Drank 3 Miller Lites!!! Oh, well.

I also exercised a ton, and I think the 2 will balance each other out, given a couple days. I know I made good choices  look at the sugar count!  and in the end, I still wore my size 16s to dinner, I ate a ton, and I felt NO NEED to unbutton them under my sweater when I finished, LOL!!!

It is not possible for me to exercise any more than I have been, and I skipped all cheese and nuts completely yesterday. I skipped the second helping of coffee I have been enjoying later in the day.I skipped the bacon with my eggs. All for naught, apparently, as I am STILL up a pound and a half. (from my lowest point). WHY? WHY? WHY? *stomps foot and tosses head*


DECEMBER 9, 2000 SATURDAY
BREAKFAST 8am Coffee with heavy cream, 1 Atkins bar, 1/4 cup nuts
LUNCH: 1 chicken breast over 1 cup Romaine with 3 Tb TLC ranch, 1 Miller Lite
SNACK: 2 TLC Adamo muffins (chocolate raspberry flavored)
DINNER: Went to a party (at the Adamo residence, guess why I named the muffins that?! Yup, hostess gift), ate 1 oz pepperoni and 1.5 oz sharp cheddar before we left. Ate 2 oz roasted turkey at the party, drank one small glass wine. (I expected more LC foods there, since the hostess is LC, but the caterer wasn't, apparently  next time she should hire ME! LOL) When we got home I drank 2 Miller Lites and a bunch of water.

Later I drank one cup Orange Mandarin tea with a shot of SF DaVinci orange syrup in it  that orange syrup smells and tastes WONNDERFUL  I am thinking about salad dressings and all sorts of other things to use it in!

LUNCH: 130p Made a variation of Impossible Pie in a 13x9 pan with cauliflower instead of spinach, skipped the cottage cheese, changed the proportions and the cheeses  Heck, I guess it is a whole new dish! 4 carbs per 1/12 of the big pan. Ended up eating 2 full servings.
DINNER: 615p 1 more small serving of my Impossible Casserole.

I know, BAD BAD thing to mix them, and I learned my lesson - Amazing how buzzed you can be and yet still be capable of feeling ALL THAT PAIN ^%&$&*(W%^Y*$^*)(@_)^* Along with the buzz came incredible hunger (cravings) and I then made 2 big bowls of instant OIAB - I am talking more than 5 oz. of cream cheese alone. OMG!

Thank you, God! I consider this one of those "small favors" we are always speaking of.


DECEMBER 13, 2000 WEDNESDAY

SNACK: 1030am  Impossible Casserole topped with 2 fried eggs  OMG! This was heaven! And very filling.
LUNCH: 230  realized it was time to eat, but not real hungry. I ate a Carbolite white chocolate bar over the course of the afternoon. About 4pm I ate 2 bran-a-crisps with 4 oz. of that squeeze cheese on them.
DINNER: 730  finally felt a little hungry so I nuked 3 oz deli turkey with 2 oz extra charp cheddar
WATER: 3.5 liters

Will have to remember this day next time I am ragging about gaining for no reason.
NOTICE: I am preparing to leave town till Christmas and I may just suspend all journal entries until Xmas is here, I am very very busy just now and to tell the truth, I am looking forward to taking a break from all the analyzing! It has been months since I ate something without broadcasting it all over the net, and although I have no intention of doing anything different as far as how I eat, it will be nice to just forget about the recording and the computer an entire week. I wouldn't bother checking back here for an update between before the 26th or so.

DECEMBER 26, 2000, Tuesday:
I was really pretty good on my trip away, and I weighed exactly the same upon my return. However on the 23rd I woke up, up 2.5 pounds, for absolutely no reason that I could think of. Needless to say, I was less than pleased because I had been thinking of actually eating a homemade cinnamon roll on Xmas morning! As it was hard to stay motivated to be good after that, I ate too many nuts and too much cheese and a couple too many Nirvana bars and gained another 2 pounds on the 24th. Xmas day included raspberry dacquiris made with DaVinci syrup and frozen raspberries and vodka, prime rib, mashed turnips, gravy, and broccoli with Easy Cheese  you know, that squeeze stuff! And I almost burned the house down  blame the dacquiris I guess we had Decadent Crabbies for appetizers and the second batch stayed in the broiler WAY TOO LONG  suddenly the alarm on my stove went off and when I opened the oven door the whole pan was in flames! STAY CALM, I told myself as I loudly yet calmly asked someone to "open the door, please". I grabbed the flaming broiler pan with oven mitts and headed for the door. As soon as I stepped onto the deck (in my slippers) I hit a large patch of ice and went down Thanks to my years of cocktail and banquet waitressing, I managed to hold and balance the flaming tray with all the loose grease balanced, level, and above my head, and as I finished my descent I gracefully slid it onto the glass-top table that sits on the deck and was covered with a couple inches of snow. When the grease hit the snow, there was a whole new eruption of flames, of course, those were a good 16 inches high! Now, had I had tilted that broiler pan at all as I fell, I would likely have been scarred for life! And I could have burnt down the house, to boot. Thanks, God. Sorry about the dacquiris. Happy about the waitressing experience. That day was only an additional 1.5 pounds, bringing me up to 6 pounds over my low weight as of the morning of the 26th

B: Coffee with heavy whipping cream, and an Atkins mocha crunch bar in the way to the big 50% off sale at Wal-Mart  need some new lights! And bought a ton of other stuff that I DID'NT need, so of course the amount that I actually saved is questionable!

L: 2 TLC Blueberry flax muffins (came up with a new muffin recipe over the break, fantistico!)

D: Leftover 7 oz. slice of prime rib, 3/4 cup mashed turnips and ½ cup gravy (made with notstarch, of course), later 2 Nirvana bars

WATER: just 2 liters
EXERCISE: nope
CALORIES: 1569
FAT: 112 gm  66% (Saturated: 47g, 28%)
CARBS: 31g - 6% (Fiber: 9g) NET=22
PROTEIN: 106g  28%
RESULTS: WHOOOOOOSH. Down 4 pounds of the 6 total that I had gained back. Wha-Hoooo. :)

DECEMBER 27, 2000, Wednesday
B: Coffee with heavy whipping cream, 1 Blueberry Flax muffin
SN: 12pm, at the store, 1 oz. salted peanuts
L: 2:20p  2 fried eggs, 4 thin slices bacon, 1 slice toasted Oroweat Lite bread w/ butter
D: Keto-Pasta with TLC Lemon Meatballs & Ragu traditional spaghetti sauce (just 6 net carbs per half-cup) also ate 1.5 melba toasts with peanut butter & later I ate 2 Nirvana bars

WATER: just 2 liters
EXERCISE: 400 ab crunches!
CALORIES: 2708
FAT: 215 gm  72% (Saturated: 60 g, 20%)
CARBS: 67 g - 7% (Fiber: 21 g) NET=46
PROTEIN: 138 g  21%
RESULTS: I am shocked at the total carbs! I still need Lifeform, myself, after all of these months of using it I still underestimate my own intake. Shocked!!And even more so that I lost half another half pound eating all of them. :)

DECEMBER 28, 2000, Thursday
B: 8AM Coffee with heavy whipping cream, 9AM 1 Atkins mocha crunch bar
L: 1PM Salad made with 1 cup Romaine, 2/3 cup homemade chicken salad, a little red pepper and 1 HB egg, drizzle TLC seasoned vinegar, also ate another Atkins bar ** Found Hollywood safflower mayo in my little store. It contains "dehydrated cane solids" as well as HONEY, but they are at the very end of the ingredient list, and it is so much lower in saturated fat than the other kinds that I am willing to chance it, and I will be using it from now on instead of Kraft or Best Foods, in an effort to help my rising LDL cholesterol.
SN: 430PM 1/2 cup mixed roasted walnuts and hazelnuts (from theNutFactory.com, MAN OH MAN, are their nuts good!!
D: 615PM Tacos! Ate 1 taco in the shell (did you know that the "store brand" taco shells have only 5 carbs each??) then made a taco salad over Romaine with seasoned meat, shredded cheese, minced onion, sour cream, tomatoes and salsa ... I ate the taco first thing, and then as I started to eat the salad I realized that while I did in fact enjoy the taco shell, had I started with the taco salad I would have been perfectly content to eat just that!! Next time, salad only! I also had 3 small flutes of Chardonnay, about 9 oz, then got the MAJOR MUNCHIES. Made OIAB with DaVinci (no Splenda) and ended up eating THREE SERVINGS. Ouch.
WATER: just 2 liters
EXERCISE: not really, I took Matt and a friend sledding but there wasn't an extra sled for me so I mostly just watched :(
CALORIES: 3159
FAT: 243 gm  75% (Saturated: 60 g, 20%)
CARBS: 60 g - 6% (Fiber: 19 g) NET=41
PROTEIN: 137 g  19%
RESULTS: NO GAIN, which is surprising to me, I expected at least 2 pounds, to tell the truth. That's 2 days in a row with the recommended amount of fiber, too, so good for me!

DECEMBER 29, 2000, Friday

L: 1130AM Leftover Ketp pasta, lemon meatballs and Ragu sauce.
SN: 1 cheddar flavored string cheese
D: Small salad with romaine, taco meat, cheese, and ranch
WATER: 3 liters
EXERCISE: skipped it

FAT: 160 gm  74% (Saturated: 54 g, 25%)
CARBS: 36 g - 5% (Fiber: 10 g) NET=26
PROTEIN: 99 g  20%
RESULTS: Down the last 2 pounds of gain-back and ready to break the Big Six-Oh!

DECEMBER 30, 2000, Saturday

L: 225PM  Impossibly Easy Casserole from the freezer
SN: 430PM .4 cups mixed roasted walnuts and hazelnuts, 2 Diet Rites
D: 615PM TLC Chicken Alfredo served over my new TLC Hot Slaw. After dinner, I made TLC Almond Drop cookies and ate  count em  FOUR COOKIES @ 3 net carbs EACH. Oh, dear, and I was doing SO WELL up to that point
WATER: 3 liters
CALORIES: 3089
FAT: 258 gm  75% (Saturated: 83 g, 24%)
CARBS: 65 g - 6% (Fiber: 21 g) NET=44
PROTEIN: 147 g  19%
RESULTS: Gained back 1.5 pounds, to no one's surprise, I'll bet. Grrrr. WHY did I make cookies? I wanted so badly to break 60 lbs. THIS YEAR - and now it is too late. Oh well. Tomorrow is another day, hell, TODAY is another day, and eventually I'll break 60, and then 80! And then 90.. in good time, as they say, in good time. MEANWHILE,,, life goes on. :)

D: 6PM A killer ribeye steak and 1 cup TLC coleslaw. Then about 2 liters of cheap white wine. I didn't even make it till midnight before I passed out. Oh, well. I do remember having lots of fun and playing a lot of pool with the kids but everything caught up with me all at once about 10:30. I think this is the very first New Year I slept through since I was a baby.
WATER: 3 liters

FAT: 194 gm  72% (Saturated: 49 g, 18%)

RESULTS: I may never drink again! I really can't remember a hangover like this not for decades! OMG. Whether it was due to dehydration or what, I lost 3 pounds overnight and FINALLY BROKE THAT 60 POUND MARK! I would take the 3 pounds back just to feel human again, however. Facing that monstrous 22-pound raw turkey this morning was an almost superhuman feat. Will I never learn? LOL
