AUGUST 2000

August 1, 2000 Tuesday
BREAKFAST: 700 am Coffee with half and half cream, 1 TLC peanut butter cupcake
LUNCH: 12 pm 3 slices (3 oz) ham wrapped around 2 oz (3 slices) swiss cheese, 1 Darrel Lea chocolate bar over the course of the next couple hours, one delicious bite at a time until suddenly! It was all gone *oops* And although they no longer give me diarrhea, my little tiny town in Colorado qualifies for the name "windy city" much more than any town in Illinois does, once I have eaten one of these treats!! Yikes. Don't eat one at or before work, you have hereby been warned.
SNACK: 3pm 2 TLC bran crackers with 2 Laughing cow chz wedges and a CarboLite chocolate egg protein shake  OMG. Can you say chocolate 'instant breakfast'? These shakes are GOOD. I added some heavy cream and a little chocolate DaVinchi along with some ice cubes, and it tasted JUST like a frozen chocolate milkshake. I highly recommend this shake mix. Besides, it is nice to have something without soy in it - given all the negative things they have been saying about soy lately, I get more than enough in my fake baked goods and occasional tofu. AND  these shakes have ZERO carbs. Yup, ZERO.
DINNER: 6 pm Chicken Alfredo over shredded steamed napa cabbage & cauliflower. OMG. This was one of the fastest  and best  low carb meals I have made. And it took a total of just 20 minutes, start to finish. If it hadn't been so very colorless I would have snapped a picture, but it was just too white. I was a bit frazzled and neglected to write down what I did as I went along (duh!) but I will recreate it again soon, and it is definitely going on the list of entrees for the book today. Only 4 carbs per serving, I can add some red peppers for color and still hit the under 5 per serving mark that I strive for. And the napa cabbage was much better than the bed of green cabbage that I had under my lemon chicken.
Why was I frazzled? Because yeast bread attempts #4,5,6,and 7 are all in my trash can. I wasted a whole day and a bunch of expensive ingredients trying to improve on a recipe I had already made satisfactorily! DUH. I wanted to lower the carbs further and got what I thought was a good idea after reading the ingredients in the CarboLite bread mix. I should have left well enough alone! Though I finally got it through my thick head what was happening, and one more try might just do it. But I am going backwards to bread #3 that I liked, and making SMALL modifications next time. And if the carbs are higher than 5, well, it will just have to be recipe that waits for maintenance to be enjoyed, you know? Some things just can't be lowered enough without totally sacrificing taste and texture and that I vow not to do!! I'd rather eat none than eat a poor imitation, and that goes for ALL foods, not just bread. I do not think I am alone in this sentiment.
WATER: 4 liters
EXERCISE: 16 minutes on the NordicTrack, then 110 crunches (advanced position) and a 2.2 mile fast walk. No weights as today should be an off day (you can't do resistance training every day and get results, your muscles need a day to heal in between. But aerobics, situps, and walking, stuff like that, you can do every day.)

Morning after notes: The first time I got on the scale it read exactly the same as yesterday. Talk about pissed off! I went back to bed after announcing to the bedroom walls in general (loudly) that I was NOT going to exercise today, and I WAS going to eat like a %$&*ing pig- and why shouldn't I????
After five minutes though, I went back in the bathroom and got on the scale again  why?? It's not like I had a BM or anything that would have changed it  and yet it was down half a pound., Then I noticed that the BF reading was at 27  ya, right!! That's my GOAL  so I got on it again, and took care to place my feet straight on the pads like you're supposed to instead of the pigeon-toed stance that I naturally assume when not paying attention, and lo and behold! This time I read a full pound lower than yesterday, only .5 over my all time low. I think I will start yelling at the walls EVERY morning, LOL. And TOM made an unexpected afternoon comeback yesterday so I suppose I could assume that I may drop yet more water today. Maybe tomorrow I will be back to where I was  just in time for a visit from my brother and his family. We are headed up into the hills camping and though I will attempt to make a journal by hand of my food, there will several days when I am missing in action from this website, starting this weekend don't miss me too much, haaha.

Not too hung over though, and I am sure I can thank the sugar free mixer for that! The cousins are getting on like gangbusters and if the rest of their visit is anything like Day 1, I am going to have a ball - and gain a TON.

August 4, 2000 Friday
BREAKFAST: 700 am Coffee with half and half cream, 1 piece chocolate cheesecake
LUNCH: 12 pm My favorite salad: romaine lettuce with grape tomatoes, red pepper, feta cheese, bacon and S.H. mustard, also ate 1 oz macs and drank a beer
SNACK: OIAB
DINNER: Italian grilled chicken breasts, MockaRoni & Cheese, another small salad sans the meat this time and made with asst. baby greens instead of romaine
My brother invited another CHEF who he worked with in the old days when he lived here to eat with us! (No pressure there, right?) I also fixed scalloped cheesey potatoes for everyone else, but all the adults actually PREFERRED the mockaroni!! Both cooks, as I like to all them (gentle ribbing) really liked the red relish, too. And couldn't guess what was in it, either (I was patting myself on the back then, hehe). My SIL said she would not have even tried the mockaroni had I told her what was in it first! (you can see she hasn't thoroughly checked out the recipes on here yet! But she probably will. I fixed all my faves for her.)

August 5, 2000 Saturday through August 7, Monday
Truthfully cannot remember precisely! On Sunday morning we left for camping, where I typically ate bacon and eggs for breakfast, and salad for lunch, with steak, venison brats, hamburgers, or hot links for dinners. I had a couple pieces of cheesecake and a couple servings of OIAB while there. I boiled up some turnips and sliced them and put them in foil (potatoes for the kids and bro) with an onion ring and some butter and salt and pepper. Those were good thrown on the grill as a side dish, and we had creamed cucumbers and salad and rainbow salad with us, so I ate well and stayed very low carb. The last night I toasted one marshmallow and ate it. I had eaten barely any carbs that day and the pkg. said only 4 each. Not too bad ~ considering. (We couldn't have a fire up there because it is SO dry, but the kids toasted marshmallows over the grill or camp stove.) I felt really strong and good, & I did a 4 mile walk one morning early, at an average elevation of 9,500 feet, all up and down. Then there's the constant walk to go pee, downhill and then back up a steep grade. That has to add up. And then rafting. All in all, I was good, but I was good on vacation in June too and gained more than a pound a day, so I was pleasantly surprised to see that I was still the same weight upon my return. Of course I was up 2 TOM lbs. when I left and those should have passed, but I'll still take it!

August 8, 2000 Tuesday
BREAKFAST: 83000 am Instant coffee with half and half cream, scrambled eggs with sausage, bacon and pepper jack cheese, 2 Tb. 505 green chili sauce over the top, couple more pieces of bacon on the side
LUNCH: 12 pm My favorite salad: romaine lettuce with grape tomatoes, red pepper, feta cheese, bacon and S.H. mustard, also ate 1 chicken breast
SNACK: OIAB
DINNER: Drank 2 miller lites after rafting the Arkansas through Brown's Canyon. Yee-hah! A class III float even at this time of year. I snorted a bunch of water in the bottom picture but kept my seat in the raft  and so did my 8 year old son, 10 year old nephew and 12 year old neice, which is more important. Bet they won't forget this. Who's your favorite aunt NOW, huh? Haha

BREAKFAST: 700 am Coffee with half and half cream, 2 oz. bacon
LUNCH: 12 pm salad: romaine lettuce with ½ pkg. buddig chicken meat, 2 oz. extra sharp cheese, 1 oz. bacon and S.H. mustard, also ate ½ a Darrel Lea bar
SNACK: 1 oz. maui onion macs, 1 piece TLC jerky, ½ of a TLC choco coconut bar
DINNER: ¼ lb. burger with Kraft Deluxe cheese and 1 cup TLC coleslaw
Last day with the family and it went WAY TOO FAST. Bro announced at dinner that he is "ready to do this thing too" which made me feel pretty good. My SIL lost weight while she was here, on vacation!! (and she was not exactly devout, drank Doc Otis lemonades  daily! (unknown carb count but my guess is high) - and a bunch of bloody marys one day instead - at 9 carbs per cup). Or course our eating was similar otherwise. It is just further proof to me that I AM NOT NORMAL as far as metabolism goes. That's okay, at least I am secure in the knowledge that"it" was NEVER MY FAULTand it is not my style of LC food that keeps me from losing either. I do keep getting smaller regardless of how slow the change is on the scale, and for now I must try to be content with that. Because I am just NOT going to go the calorie restriction route. I've been there, done that, and WILL NOT GO BACK there. Remember me saying " as God is my witness, I will never be hungry again" Well, I am determined that that remain true. Because deprivation only made me look and feel ill while I lost just as slowly. Gotta count those blessings instead of dwelling on the "it's not fair, everyone else loses a ton doing what I do" blahs

Morning after notes: Up 1.5 pounds. You can guess how I feel about that!! I thought the above numbers were damn near perfect and expected to lose at least a pound of the extra I have been carrying around. L My muscles are SO SORE today, though. Even my thighs, from bracing myself to stay in the raft I guess. Maybe they are just late retaining water in order to heal, repair and grow. I can hope, right?
My bear picture was on the front page of the local weekly paper today  I emailed it to them right after taking it. Apparently there have been quite a few sightings besides mine. They say it is too dry and they are hungry. Hmmm. Where have I heard that before.smile.

BREAKFAST: 700 am Coffee with half and half cream, 2 pc. (½ oz.) bacon, 2 sausage links
LUNCH: 12 pm Leftover chix breast (5 oz) topped with creamy Italian sauce/dressing that I whipped up  gotta add this to the book list now, it was awesome and my daughter begged me to make more for her when she tasted it! 2 oz. (½ cup) blueberries
SNACK: nope
DINNER: TLC green chili and a LaTortilla quesasilla (the quesadilla wasn't to good, won't try that again  the LaTortillas just don't cook up right, they get all tough  but the chili was fanatastic and only 3 carbs per servings. DH ate 3 servings but one was enough for me.
WATER: at LEAST 4 liter
EXERCISE: Nordictrack- 15 hard minutes  then could only manage 110 crunches  then 230 separate arm lifts  THEN walked to the PO (in the heat, yet, at noon, only 99 degrees here!) that's 1.5 miles

Morning after notes: Little low on protein, esp. considering all the exercise. Fat is low again  was sort of worried about that  but, even though I am still retaining a ton of water (due to the heat?) I was down 2½ pounds to my NEW all-time low weight!!! I am going to have to change the flasher on my front page!!! Wish you could see me grin J It seems that right now reduced calories may be the ticket. It didn't used to work for me at all, but things change, maybe this is the way to shake things up for a while. Don't know if I can keep my calories that low regularly, or that I would want to (I do enjoy some cheese! And I swore I would not go hungry) but I will try for a while to hit these low numbers 2 or 3 times a week and see what happens

August 12, 2000 Saturday
BREAKFAST: 700 am Coffee with half and half cream, 4 sausage links, 2.5 scrambled eggs with pepper jack cheese and 1/3 cup TLC green chili over the top  YUMMM
SNACK: 10am after my ass-kicking walk  1 slice Oroweat light wheat, toasted with butter and almond butter. Found this new Maranatha almond butter in my store, all natural and it says 2 Tb = 6 carb and 6 fiber. I input it into Lifeform as 6 and 5  since nothing in life is really free! And my snack still only had 6 carbs. Yahoo.
LUNCH: 115pm  1 leftover chicken breast shredded in a latrotilla with 1/3 cup shredded cheese and 1 Tb sour cream & some green tobasco sauce. Later I ate ½ a Darrel Lea bar.
DINNER: No real dinner but in three separate installments I ended up eating 6 oz. of cream cheese (2 oz. nuked for 10 seconds and stirred into 1 Tb. french vanilla Davinchi and 1 tsp. splenda, with 1 tsp, almond butter. I know, bad girl. Should have eaten a real meal. Had no kids around to cook for though. And cream cheese is the perfect LC dieter's food, right, Dr. A? (Don't plan to make a habit of this, don't worry.)
WATER: 4 liters
EXERCISE: 1.5 mile power-walk that completely kicked my ass. I should not have worn the wrist weights, my arms reminded me of my weightlifting from yesterday before I even got out of my neighborhood. And my sneaks are worn out (new in April, $90) so my feet start hurting at the ¾ mile point. Going school shopping on Monday to Grand Junction, so I will replace them then. Can't wait! (not for the school shopping, for new Adidas'!)

Percentages look good, at least. Today I plan to work on a new dessert  steamed blueberry pudding cake. Wish me luck not eating it all if it comes out as well as I hope!

August 13, 2000 Sunday
BREAKFAST: 700 am Coffee with half and half cream, 4 slices (1 oz.) bacon, 3 scrambled eggs with 1 oz. pepper jack cheese, 1 slice toasted LC soy crunch bread with butter
LUNCH: 115pm  TLC Green chili  my 8 year old BEGGED me to make more, how about that! Then a serving of steamed fruit pudding  like a bread pudding, you know? Topped with fruit syrup and a drizzle of heavy cream. YUMMM. All the fruit (rhubarb and blueberries this time, think I'll do strawberry next time!) pretty much covered up that nasty soy taste completely. It was really good ~ both my kids wanted seconds.
SNACK: 4 pm 1 oz pepperoni
DINNER: 530pm about 8 oz. of smoked turkey, yummmmmm, if you don't have a smoker, consider getting one! Cheap at Wal-Mart and well worth it. Also ate half of the first vine ripened tomato from my garden, I am totally impressed with myself. No one out here grows tomatoes but me and mine always do great! My first garden, a few years ago, I got a plot at the community gardens and out of 30 plots mine were the only tomatoes to ripen on the vine at all  and I had a bushel from just 4 plants. All Hail Miracle Grow!!

August 14, 2000 Monday
BREAKFAST: 700 am Coffee with half and half cream, then at 9, 1 Keto-bar while on the way driving to Grand Junction to spend entirely too much money school shopping.
LUNCH: 1230pm in the car in the parking lot  about 1 cup of Romaine with 2 oz. smoked turkey and 3 Tb. Ranch, also 1 venison pepperoni stick, carbs unknown, which I counted as ½ oz. pepperoni cuz it has so much less fat in it
DINNER: Ate one more Keto-Bar while driving home about 5:30, at 8pm I had two bites of the turkey salad I had just made, then at 9pm I had 2 oz. of cream cheese with 1 tsp. Splenda and 1 Tb. french vanilla Davinchi syrup
WATER: only about 3 liters
SUPPLEMENTS: I forgot!

Morning after notes: Whooooosh! Down another 2.5 pounds!!!!! All (good) things DO come to those who wait (patiently). I knew (hoped) it was coming ~ because I stepped on the scale when I got home last night and fully dressed (no shoes) I was only 2 lbs. over my new low weight. That makes 7.5 pounds in just 5 days, 3.5 pounds of gain-back and 4 pounds of new fat loss. Hallelujah, I am ecstatic.

August 15, 2000 Tuesday
BREAKFAST: 630am Coffee with heavy cream only  got tied up at the computer forever, it seems.
LUNCH: after my workout, 11:30am - about 6 oz. filet mignon that I pan-fried in safflower oil, 2 fried eggs, 1 slice toasted LC soy crunch bread with butter. Then a little less than half of a Darrel Lea bar. I was ravenous! Didn't quite make it the whole hour after before I ate, but close.
SNACK: about 3pm I got hungry and ate about a cup of the turkey salad I made with celery and mayo and vinegar and a titch of splenda.
DINNER: 630  beef tenderloin with a few slices of marinated cukes and tomatoes, then at 8pm the cream cheese concoction I have been eating at night lately with such good results.(But then I stayed up till 12:30 so I night as well have skipped it!)
WATER: 4 liters
EXERCISE: Well, after only 2.5 minutes on the NT, I started having heart palpitations (in between the constant pounding I was already having) a headache, and felt like I was going to throw up. This made me realize that I forgot my supplements yesterday! So I went and took today's, then did 150 crunches, 100 arm lifts, and one more minute on the NT before I decided to give that up for the day and took a 2 mile walk instead (sans weights, my arms hurt enough already!) TAKE THOSE SUPPLEMENTS!

August 16, 2000 Wednesday
BREAKFAST: 630am Coffee with half and half cream, 3 eggs scrambled with 3 slices Am. Cheese and 1 oz. bacon
LUNCH: 1230 Romaine with turkey, feta, cukes, tomatoes and my new Creamy Italian Parmesan. It is so good I think I can give up my carby ranch dressing, between it and the Sh Mustard I'll be just fine.
SNACK: about 3pm 3 oz. cream cheese nuked with Davinchi syrup and cocoa and splenda
DINNER: 630 Leftover green chili and I made a cheddar cheese crisp to go with it
WATER: barely more than 2 liters, don't know why but I just wasn't thirsty today
EXERCISE: Managed 175 crunches. When I started I didn't think I'd make 50  I was still sore from yesterday. But I kept at it until I had done MORE than yesterday. Am going to try to do these every day, and some cardio and weight lifting every other day (except for weekends, weekends are for being a slug).

Morning after notes: Numbers look good nvertheless I am up another half pound, dang it. Oh well, that's nothing, really, I am still closing in on 40 gone and just a few weeks ago I didn't think I was ever going to break 30. Better be happy, I guess! I may even be retaining water because of an infection and I am having some trouble exercising, I have had a sore on my right calf since MEMORIAL DAY weekend. I had my doctor check it before we left for California in June because it looked infected and wasn't healing. I then took a whole course of keflex, a heavy duty antibiotic, then I had him check it again in late June when I went in for my blood work and pap. It STILL hasn't healed. While rafting last week it got wet, soft, bumped, and broke open. Either I re-infected it or the infection has just now finally come to the surface cuz I am MISERABLE. The top layer peeled off and I now have a hole in my leg where it has been abcessing under the scab. I soaked it a bunch yesterday and kept applying neosporin and it HURTS HURTS HURTS. And although it looks worse than ever, (can you say RAW MEAT) I think this was all a good thing, at least something is happening now. I do have a big red patch around it, though, which worries me a lot as it has started to travel down my leg in a line. I can't help but think that if I had had a systemic infection for this long I should have been either cured or dead by now in the middle of the night I lay there thinking about lovely things like gangrene and flash-eating bacteria and cancerous tumors. Then I call myself a hypochondriac and roll over. I will give it till Friday afternoon and keep the hot compresses going and if it is not significantly better then I will see the doctor - AGAIN. But I do not think I will be NordicTracking for a while. I think I can handle a walk though. I guess I will have to credit all the vitamins and exercise and good nutrition for holding this infection at bay all these months so far.
Been looking over my food notes  I ate 2 Keto-bars one of the days I swooshed. I never seem to lose anything when I eat Atkins bars ,though. Tthe Keto Bars say they have 4 carbs and I think they count ALL of them, unlike the Atkins bars and the uncounted 12 carb of glycerine. Anyway, I am giving up all the Atkins bars & I am ordering some more KetoBars. Even though I am eating an Atkins bar right now! DH doesn't like the Keto bars (am I the ONLY one who does?), so maybe he won't eat them all in one week. Like he does all the rest. Grrrr.

August 17, 2000 Thursday
BREAKFAST: 7am Coffee with heavy cream, 1 Atkins bar
LUNCH: 1230 Romaine with half a fresh tomato and 2 oz. cheddar and my new Creamy Italian Parmesan.
DINNER: I had something planned but had a cooking catastrophe  I was working on my sweet green relish and I screwed up the seasoning but good, the first attempt. So I decided since it was already in tiny tiny pieces, surely I could put it down the disposal without any problems. DUMMY! I should know better, I stopped using that damn disposal right after they finished my brand new kitchen  you see, we did all the remodeling ourselves with the help of some friends in various trades (DH is in construction and so was I for over ten years, between the two if us we have ALL the trades covered!) ANYWAY, whoever we got to plumb was not the brightest bulb in the fixture - and we ended up with about 8 90s in our pipes, which I think is why it CLOGS UP ALL THE DAMN TIME. Anyway, when I realized that I had clogged it up  again  I started pulling all the crap out from underneath so we could try to snake it out  AGAIN  and discovered that my top of the line water filter was leaking like a seive under there. The board in the base of the cupboard was all rotted out, dipped down, and holdiong several quarts of slimy stinky water, smelled like some 300 year old basement under a morturary. So now we had to cut out that piece of cupboard floor and check the subflooring (I have oak hardwood in the kitchen, a REAL catastrophe if IT gets flooded and warped!!) Now Dh is planning to re-do the pipes and eliminate three of the 90s but meanwhile I have dirty dishes all over and no way to clean them unless I carry them all to my bathroom and do them in the shower. *BIG SIGH* DAMN IT!
Anyway, after this happened, I ate some pepperoni chips and cheddar cheese with the kids instead of the dinner I had planned to cook, and I had a 6 oz. glass of Chardonnay and ¼ cup of pistashios in the shell (I shelled them and weighed them and they weigh 15 gm. Now I know how much to enter in Lifeform and I am keeping a ¼ cup size scoop right there in the jar to help me measure.) I did stop at the one glass of wine but it gave me the munchies, cuz then I ate an ENTIRE Darrel Lea bar. THEN I went and nuked 2-3 oz of cream cheese and stirred a Diet Swiss Miss cocoa packet into it along with Davinchi syrup. Egads! And it had been a real good day (diet-wise) up till then .
WATER: only 2 liters, don't know why but I just wasn't thirsty today  AGAIN. What's up with that?
EXERCISE: Managed 115 crunches. When I started I didn't think I'd make 50  AGAIN - I am sore from doing them every day! Also did about 300 individual arm presses of various types and that's all, no walking even. (Leg hurts!)

Morning after notes: Low protein, bad girl! Still I am down half a pound. I WAS up ANOTHER half pound, which really pissed me off - and so I went back to bed for an hour to wait for DH to finish with the coffeemaker and leave for work before I got up (I drink COFFEE, and he drinks mildly-coffee-flavored water with cream and AS!, so we don't share coffee). Anyway, by the time I slept some more and then went to the bathroom again, I was a full pound less than before. Isn't that weird?! But I'll take it, between my leg and what I did to the kitchen yesterday, I don't need any additional stress DH is pissed at me, to say the least, but if I hadn't caused a clog, we might not have discovered the other catastrophe-in-the-making until it was too late and we lost a $6K oak floor.. so I am trying to rationalize my stupidity by telling myself it was all for the best. Meanwhile, I have no usable kitchen. Guess I will work on typesetting recipes for a few days more instead of cooking. As long as I can cook all next week while the kids are in school, this shouldn't affect the book schedule. (SCHOOL! What a lovely thought.) And I think I will pitch the damn $300 water filter, start buying water like everybody else in this town, and put an insta-hot or a soap dispenser in the hole instead. (We already went through this once - I got replacement parts for the filter and we thought it was fine  it WAS fine, for months. Gradually I filled up the space down there with cleaning crap again and forgot to keep checking for new leaks. Duh! Duh! Duh! I will not stop kicking myself for this one for a looong time.

August 19, 2000 Saturday
BREAKFAST: 7am Coffee with half and half cream, 1 oz. cooked bacon
LUNCH: 1230 3 oz white albacore tuna in 1.5 Tb mayo, wrapped up in a latortilla, also a chunk (1.5 oz) cheddar cheese and some cream cheese
SNACK: none I was trying very hard to be good
DINNER: 530 Chauteaubriand (flank steak marinated and boiled whole) and Twice-Baked Faux-tatoes
WATER: finally drank the whole 4 liters again today
EXERCISE: Managed 200 crunches! By then I felt better and also did 350 arm lifts, then I walked 3.15 miles. It rained hard the night before and the ditches were almost musical, full as they were of running water. The clouds were big and puffy and lying low, hugging the mountain tops like puffy mounds of meringue and the smell in the air was incredible. There's nothing quite like the sudden burst of green that accompanies the end of a long dry spell. What a day!

Morning after notes: Stayed away from AS all day. Managed to drink all my water. Took all my supplments. Did everything right in fact, these numbers look damn good, and I exercised my ass off for an hour and a half straight. SO WHY AM I UP HALF A POUND???? Arrrrgh! Reciting all the old platitudes about muscles that are worked hard retaining water for repair but am still not very happy with my "reward" for being good I can tell you one thing: This Sunday I will be a true slug. I may do my crunches since I managed to them 6 days in a row so far BUT THAT's IT! And I think I will make ice cream after dinner too. I deserve it!

August 20, 2000 Sunday
BREAKFAST: 7am Coffee with half and half cream, protein shake Mid-morning, I had a TLC Peanut Nirvana bar
LUNCH: 1230 ½ a LC pizza  I was so pissed about gaining yesterday that I threatened Pizza Hut - but I made a LC version instead. No more weak crust attempts, from now on I'll put it on a cheese crisp and call it good.
SNACK: 2 more PN bars
DINNER: New York steak, Shrimp & Scallop Scampi, ½ cup leftover Twice-Baked Faux-tatoes & another bar
WATER: 4 liters
EXERCISE: Managed 200 crunches! Again, even on Sunday.

Morning after notes: I decided if I was going to gain weight I might as well have a reason, and enjoy it, So I invented a new dessert that the family proclaimed "the best ever"and I ate like a pig, and indeed, I gained 2.5 pounds overnight. Just water probably, as I can't even budge my rings. Damned if I will get upset, I can lose it again. Besides, being very good was getting me nowhere fast the last few days. At least now I have someplace to go and maybe when these water pounds roll off they'll take some new weight with them

August 21, 2000 Monday
BREAKFAST: 7am Coffee with half and half cream, then at 10 I fixed 2 fried eggs with 3 oz. leftover steak and 1 slice toasted LC bread
LUNCH: 130 Made chicken ceasar salads to go and hopped on the motorcycle and rode up to Vail with my buddy. We spirited our other friend away from work and all picnicked in Ford Park. My big celebration of school starting, I rode my bike for the first time in 6 weeks. Summer? What summer? Oh that summer when I wrote the book and never went outside, yeah, I remember that summer  sort of. Haha. Hopefully it will all be worth it. Regardless, it will all be over soon.
SNACK: none
DINNER: Nuked some pepperoni chips and ate some sharp cheddar and a handful of pistachios
WATER: 3 liters
EXERCISE: None at all, didn't even find time for my crunches. I guess after 7 days in a row one off won't kill me!
CALORIES: 2020
FAT: 164 Gm, 74% (70 saturated fat gm, 32 %)
CARBS: 38 gm (9 fiber) 29 net 6%
PROTEIN: 98 gm, 20%
Morning after notes: Thought I would dump more of the gain-back but I am down just a half pound. I sure gain easily, I wasn't even that bad AT ALL when I gained three pounds (35 carbs and 3000 calories) and I will have to lose them all over again, the hard (slow) way, it seems. Oh well, I have that doctor's appt. in a couple hours, he may cut 3 pounds of gangrenous flesh out of my calf. I am scared to death about this whole thing. At least I got a bike ride in yesterday since I may be laid up for a while now Cross your fingers for me!

August 22, 2000 Tuesday
BREAKFAST: 7am Coffee with half and half cream and a Pnut Nirvana bar
LUNCH: 130 Keto-Pasta topped with TLC Marinara. I was practically in tears. The pasta wasn't ALL that good, but it was recognizably pasta, and with a killer sauce on top, it transported me back, back, to the old days  the only difference was that after I was done eating I did not feel as though I needed a nap! I will be ordering more of this stuff!
SNACK: 30g pistachio nuts (about 50) 2 Diet Rite colas  this stuff is GOOD. Funny, I was a Pepsi drinker and this reminds me the most of real Coke, but I like it better than either, really. Drank 2 so it could be a test, I was thrilled to pieces to find it in my local store, finally.
DINNER: Taco salad, then half a frozen pnut bar. Whoa! They are even better frozen, like a chewy but still soft ice cream bar of some kind. Mitch took one to a guy he knows at the jobsite who went on the Atkin diet and the guy almost cried, he said. He said I should cut them in the size of an Atkins bar and he'll charge him $3 a piece and take one every day. Hmmmm. A profitable little sideline that would be! And I don't think his wife cooks at all, so even if he buys a book maybe I can still build a pre-made products business.. hmmm, potential everywhere. Time is the only current enemy.
WATER: 3 liters
EXERCISE: Not after the doctor dug around in my leg all morning to take a culture.
CALORIES: 1392

CARBS: 41 gm (10 fiber) 31 net 9%
PROTEIN: 86 gm, 25%
Morning after notes: Protein inadequate but I didn't do diddly (physically) all day, so, so what. (It does matter, but I have other things on my mind that seem a lot more important right now.) Down 1 pound. Calories low enough to balance out the 10% carbs, I guess. Considering how low the calories were, I sort of expected to lose more, but I will always take a loss, happily. 1.5 pounds of gain-back to go, still. Considering the infection in my leg (It is an infection! It is an infection! It is an infection! The culture WILL grow something - cuz I don't want to have to see the general surgeon for exploratory surgery and biopsy, and that is the next step, he says). Anyway, I can at least blame this current weight gain on the stress my body is under from fighting an infection (true or not, hehe). On the up side, my pulse was 58 and BP was 110/71 when they checked it, and they couldn't be any better. I just wish he hadn't asked me quite so many times about any family history that includes skin cancers or disorders. I don't have the time to worry about this right now.. not to mention it puts a crimp in my exercising. And scares small children. And keeps me from wearing pants. And keeps me from sleeping. This is the first time in my life I have ever prayed for something TO grow in a culture. But if it does then we can treat it with antibiotics instead of surgery. GROW, bacteria, GROW!

August 23, 2000 Wednesday
BREAKFAST: 7am Coffee with half and half cream and half a peanut butter and bacon sandwich  1 toasted slice LC bread with 1 tsp. of pnut butter and 4 slices cooked bacon. Ate 2 more slices by themselves
LUNCH: No real lunch, too much tasting going on  ate 2 TLC brownies and 3 deep fried battered cheese stix
SNACK: 1 slice TLC Impossible Breakfast Pie
DINNER: Stuffed Santa Fe Chicken at 930 PM I ate half a nirvana bar

August 24, 2000 Thursday
BREAKFAST: 7am Coffee with half and half cream, wasn't hungry and just didn't force myself for a change
LUNCH: Tasting! Starting at noon-ish: 1 bag Lean Protein Cool Ranch chips, 1 slice Maple Nut Trifle, 1 square CarboLite dark Chocolate, 1 square CarboLite white chocolate
DINNER: 530  TLC French Onion Soup and Decadent Crab Puffs. I put my crab puff mixture from the old days on some imported Italian toasts I found that have only 5.5 carbs each. OMG. Talk about good. One or two of those toasts with chicken salad or tuna would be so good for lunch. At 5.5 carbs each, they are do-able for sure. They are called Bellino Gourmet Italian Toast wheat crackers and I found them near the crackers and melba toasts.
WATER: 4 liters
SUPPLEMENTS: Started 1 Twin Lab Dual Sustained Release Tab in place of GNC multi
EXERCISE: Shot answer NO. Long answer TOM showed up early (right after I started making the cake and after the UPS man showed up with white and dark LC chocolate and 0-carb chips! OMG, don't tell me that's not a conspiracy of some kind, bringing me that stuff when I am most vulnerable and when I am already making something yummy! But I did really well not pigging out, I just never did fit in my exercises.)

August 25, 2000 Friday
BREAKFAST: 7am Coffee with half and half cream, 1.5 slices Impossible Pie
LUNCH: 1 cup romaine with 1 oz. pepperoni, ¼ cup shredded cheddar, 3Tb. TLC Ranch, 1 leftover Santa Fe Chicken
SNACK: 1.5 Nirvana bars
DINNER: 530 Barbecued beans and Beef Stroganoff, later another Nirvana bar

Morning after notes: I expected a big gain since I am bloated and on meds for my leg, which felt tingly and then swelled some last night, but to my surprise there was no change on the scale. Must have lost a little bit of fat, to balance out the water gain. Thanks for the small favor, God. I appreciate it.

August 26, 2000 Saturday
BREAKFAST: 7am Coffee with half and half cream, 3 slices bacon
LUNCH: TLC buttermilk biscuit, I ended up eating THREE!! one with TLC sausage gravy, one with butter and the last one with butter and TLC jelly. YUM.
SNACK: 1 Nirvana bar, 2 Tb. TLC strawberry jam
DINNER: 6pm  Grilled filet mignon with scalloped turnips, Spoonbread rolls, & some leftover TLC BBQ beans. Then TLC strawberry ice cream. Ended up eating Mitch's too cuz his was melting while he talked to the cops. He and a guy he works with worked on our dirt bikes and got them running yesterday. Someone on our street of almost-all-dirt-bike-riders-and-owners called the cops to complain that they were riding up and down the street and "disturbing the peace" (while tuning them up, you know?) Anyway, the guy working for him used to live behind us. "She" keeps putting the guy in jail, it's one of those lovely long stories, anyway we're pretty sure she must have seen him here and decided to call the cops about the bikes and see if she could put him in jail again. But now she's messing with US ..BIG mistake!! Our SIL works for the sheriff's office and we are gonna find out for sure if it was her or not, and if so, it is not gonna be a fun neighborhood. She has been running down here crying on our shoulder about this guy to us for weeks now, how dare she try to get US in trouble now, just as a small part of her revenge on him? She knows that he works for Mitchand they are friends and he is apt to be here, big deal. Why does every couple on the world that goes through a break up think Mitch and I belong square in the middle of their dispute, anyway? Seems we are always playing Johnny-in-the-middle and I am sick sick sick of it!!! I have enough problems of my own without all the whackos in the world adding to them  speaking of whackos, while I was eating Mitch's melting ice cream his ex-partner from years ago called on the phone and scared the hell out of me. First she said she had been drinking and wasn't supposed to be, but when she started talking crazy I asked her to call sometime when she was sober and she said she'd only had one drink .. and I actually believe her. She said she had been in and out of mental hospitals for years and I definitely believe that! You see she had a substance abuse problem when she was running the books (she was a partner then) for Mitch and X's company years ago. X had an affair with her (she was married at the time, he wasn't) and then when she lost her ability to run the company any more due to her drug use (and I think after she embezzled a LOT of money from us to FUND her drug use) they got together and voted her out of the company. This has been 6 years ago now! So anyway, she calls and is talking all crazy, first it's "THEY took everything away from me and my life has been hell ever since" then it's "X is gonna pay that bastard" and finally " I love you, Karen, and please give Mitch a hug from me". Humming the Twilight Zone theme music, Karen says "This woman is whacked. I hope she didn't hurt herself and even more so I hope she doesn't come here and hurt one of us!!" A really scary thing, she seems completely fixated on a past which never happened  not the way she remembers it, anyway. Even though I liked her very much, I was all for throwing her out of the company when she wouldn't get help for her cocaine addiction. You can only help an addict just so much and then it's time to cut the cords so they WILL bottom out  that's the only time they are apt to seek help, after hitting rock bottom. But this gal is more messed up than ever. SCARY SCARY SCARY. If I disapppear and the website is never updated again, someone better forward this entry to the local police, 'kay? Cuz one the "exes" did it for sure. And I think it was the ex-partner from Grand Junction Colorado. Just wanted this on record somewhere, cuz I am a truly paranoid low carb person after the events of this day and I am only kidding a little bit.
